Artichokes were on sale yesterday at the grocery so I bought a couple. Generally I just steam them and dip the leaves in a butter garlic sauce. But this time I decided to be a little more creative and stuff them. Now for the hard part-deciding whether to stuff them uncooked and then bake or steam them first and then stuff and bake. I chose to steam them first, it makes the artichokes easier to handle. First I took a sharp knife and cut off the top third and then the bottom stem so the artichokes would sit flat. I then put them in boiling water with the bottom side up and steamed for 25 minutes. Once the artichokes have cooled a bit I spread the leaves to get to the center and with a melon baller was able to easily remove the center choke. The part with all the hairy stuff, yikes.
For the stuffing:
1 cup bread crumbs or homemade (which is what I did, directions below)
2 tablespoon butter
1 clove garlic minced
1 can crab meat drained
1/2 cup vegetable broth
1/4 cup green and reb pepper chopped small
1/4 cup onion
salt and pepper to taste
If you are making the bread crumbs from scratch choose a nice loaf of french bread and cut into chunks, just enough to make about a cup. Melt the butter in a large fry pan then add the garlic and saute until soft. Add the bread cubes and saute until golden on both sides. Let cool. Place the bread cubes in a large bowl and break them up. Add the other ingredients, mix well. Now for the fun part-stuff the artichokse and dot the top with a couple pats of butter.
Bake at 350 for about 30-40 minutes until browned on the top and the stuffing is heated through.
Serve with a lemon, butter, garlic sauce.
