Garlic is a staple at my house. It goes into nearly every dish I make. I can’t remember where I picked up this salad dressing but I do remember the ingredients because of all the garlic. The recipe also called for a suribachi set. The bowl has grooves in the bottom and the pestle is made from wood. That was the other thing I remembered because I am sure that I bought the set at that time. You place sea salt in the bottom with garlic and smash it into a paste.
Then you add oil a little at the time to and keep mashing with the pestle which will give you a creamy consistency. When all the oil has been added, add in the lemon juice. Pour the dressing into a cruet and shake well.

Sun dried tomato in oil drained
Calamata olives
Feta Cheese crumbled
Fresh ground black pepper

4 cloves garlic
1 tsp coarse sea salt
1/4 cup olive oil
juice of 2 lemons
